Quick Coffee Cake With Cinnamon-Oat Streusel


🧂 Ingredients:

For the Cake Batter:

  • 1½ cups all-purpose flour

  • ½ cup granulated sugar

  • ½ cup milk

  • ⅓ cup vegetable oil or melted butter

  • 1 large egg

  • 2 tsp baking powder

  • 1 tsp vanilla extract

  • ¼ tsp salt

For the Cinnamon-Oat Streusel:

  • ¼ cup old-fashioned oats

  • ¼ cup brown sugar

  • 2 tbsp all-purpose flour

  • 1 tsp ground cinnamon

  • 3 tbsp cold butter, cut into small cubes

  • Pinch of salt (optional)

🔹 Step 1: Preheat & Prep

  1. Preheat oven to 180°C (350°F).

  2. Grease an 8x8 inch baking dish or line with parchment paper.

🔹 Step 2: Mix the Cake Batter

  1. In a bowl, whisk together flour, sugar, baking powder, and salt.

  2. In another bowl, combine milk, egg, oil (or melted butter), and vanilla.

  3. Add wet ingredients to dry and mix until just combined. Don’t overmix.

🔹 Step 3: Prepare the Streusel

  1. In a small bowl, mix oats, brown sugar, flour, and cinnamon.

  2. Add cold butter cubes and mix using fingers or a fork until crumbly.

🔹 Step 4: Assemble & Bake

  1. Pour the batter into the prepared baking dish.

  2. Sprinkle the streusel topping evenly over the batter.

  3. Bake for 30–35 minutes, or until a toothpick comes out clean.

  • A hot mug of coffee, chai, or even cold milk!

  • Fresh fruits or whipped cream on the side if you’re feeling extra fancy.
